The name 'nduja comes from the French andouille, which itself refers to a pork-based sausage. Its spicy taste makes it perfect with strong cheeses, such as gorgonzola, caciocavallo or smoked provola. It can be widely used in the kitchen and adds flavour to first and second courses.
